Grrrrrrrrr...I HATE getting a blog eaten!!!
To everyone that stopped by the old blog and left Thanksgiving wishes........THANK YOU!! Hope you all enjoyed a wonderful day filled with good food, family, and friends.
I worked 7:30-4:00 Thanksgiving...yuck. Very busy!! Then I ran home, threw on a non-work shirt (lol) and ran down to my friends' home for dinner. Wow! What a spread! I work caterings for him and he's an AWESOME cook. His brined turkey, as it's been every year, is the BEST turkey I've ever eaten! Turkey, ham, chicken n dumplings, smashed garlic taters 'n gravy, sweet tater souffle, braised asparagus, green bean casserole, stuffing and all the traditional desserts...pumpkin, pecan, and apple pies. Yum. Very enjoyable afternoon/evening...great food, wonderful friends. I got home and called my parents in California and talked to my son...who spent the holiday with them. I sure miss my kid *sighs*.
I wanted to share the recipe for the 'un-traditional' dessert we had. OH....MY....GOD!! Two words to describe this.....Heaven...and Decadent!!! I HIGHLY RECOMMEND trying this if you've never had it!!!!
Turtle Pumpkin Pie Ingredients1/4 cup plus 2 tbsp. Caramel topping divided
1 cup Canned pumpkin
1 6 ounce Graham cracker pie crust
1 teaspoon Ground cinnamon
1/2 cup plus 2 tablespoons Pecans divided
1/2 teaspoon Ground nutmeg
1 cup Milk
1 8 ounce Cool Whip divided
2 4 ounce Vanilla Instant Pudding
Instructions for Turtle Pumpkin PiePour 1/4 cup caramel topping into the pie crust and sprinkle with 1/2 cup pecans.
Beat milk, dry pudding mixes, pumpkin and spices with whisk until blended. Stir in 1 1/2 cups Cool Whip. Spread filling into crust. Top with remaining Cool Whip.
Refrigerate 1 hour. Top with remaining pecans and drizzle remaining caramel with fork. Store in refrigerator.
I'm a HUGE David Cook fan...one of the songs from his new album that I just LOVE the words to (being a wannabe songwriter...I appreciate this one.)
